Our story
Hello, I'm Abbey, a proud native of the breathtaking Appalachian Mountains, where I've been blessed to call home since birth. Growing up surrounded by nature's splendor has deeply influenced who I am today. The serene beauty of the Smoky Mountains instilled in me a love for simplicity and a profound respect for the environment.
One of my greatest passions is baking sourdough bread. The art of sourdough captivated me early on, blending tradition with science in a way that's both challenging and deeply satisfying. Each loaf tells a story of patience and craftsmanship, from nurturing the starter to the final golden crust.
Through sourdough baking, I discovered a profound connection to my Appalachian roots. The process mirrors the slow pace of mountain life, where time-honored techniques yield flavors as rich as the soil itself. Whether it's a rustic boule with a hearty crust or a comforting round loaf perfect for sharing, each creation embodies the essence of Appalachian warmth.
When I'm not tending to my sourdough starter or baking in my kitchen, you'll often find me curled up with a good book, savoring moments of quiet reflection. These mountains are not just my home; they're a wellspring of inspiration and a reminder to embrace simplicity in a fast-paced world.
I believe in living with gratitude, kindness, and a generous pinch of sea salt. Join me on this journey as I continue to perfect my sourdough technique, deepen my connection to the land I love, and share the wholesome joy of freshly baked bread with those around me.
Our ingredients
Flour. Water. Salt.
At On The Fritts Baking, the heart of our sourdough lies in its starter—a living culture born from the marriage of local flour and water, nurtured daily to embody our bakery's soul. Its tangy aroma fills the air, promising depth and character in every loaf. Together, these humble elements transform in our local oven, crafting loaves with crackling crusts that sing of tradition and place. Each slice is more than bread; it's a taste of community and the pride of supporting our local artisans.
